Paso Robles Wine 101 with the author of the Wine Folly

  이번 5월에 파소 로블스에서 열리는 Wine festival에 다녀왔다. 파소 로블스는 일교차가 크고 또 석회질의 토양으로 구성되어있기 때문에 rhone variety등이 좋다. 또 Napa만큼 가격이 비싸지도 않아서 가성비도 좋다. 파소 로블스는 레드가 dominant하며 유명한 와이너리로는 Saxom이 있다. 파소 로블스 지명의 원래 뜻은 Pass of the Oak Trees라고 한다. 파소 로블스에는 창의적으로 다양한 블렌딩을 해볼 수 있다고 한다. 프랑스처럼 규율이 빡세지는 않은 듯 하다.

 그동안 가고 싶었던 도시였는데, 와인 페스티벌 참석 겸 다녀왔다. 특히 이 행사에는 Wine을 공부하는 사람이라면 모르는 사람이 없는 책 Wine Folly의 저자 Madeline Puckette의 세미나를 참석할 수 있었다. 아래는 세미나에서 다루어진 내용들.

 ** 파소 로블스는 서쪽과 동쪽으로 나누어 보면 된다 **

 -서쪽:  Templeton쪽에서 불어오는 바람의 영향으로 아침저녁의 일교차가 크다. 론 스타일 와인이 좋다.

Adelaida District, York MTN AVA (여기는 Paso Robles AVA는 아님), Paso Robles Willow Creek district, Templeton Gap District, El Pomar District, Santa Margarita Ranch

 (1) Adelaida District: Wet. Cool. Try cab. Try rhone variety. Limestone/Calcareous soil덕분에 viognier도 좋다.

* Tasting: Alta Colina Vineyard & winery에서 나온 Old 900 Estate Syrah. 96%의 Syrah와 4%의 Viognier를 블렌딩했는데, 이 4%의 블렌딩을 통해 와인의 색을 더 좋게 한다. 개인적으로 Syrah는 안 좋아해서 내 스타일은 아니었음.

 (2) York MTN AVA: Elevation이 높다. 실험적인 와이너리들이 꽤 있다. Try Desparada wine, Epoch wine

 (3) Paso Robles Willow Creek District: Excellent Rhone style. Limestone이 지배적. Denner winery, Saxom Winery. Try cab

 * Tasting: Lone Madrone에서 나온 Oveja: 남프랑스지역의 블렌딩. Concrete barrel에서 숙성시킴으로서 과실 본연의 아로마를 지키면서 와인을 숙성시킨다.

 * Tasting: J Dusi Wines에서 나온 Paper Street Narrator, red wine blend. 남부 론 스타일. 내가 가장 좋아함

 - 동쪽: 덥다.

San Miguel District, Paso Robles Estrella District, Creston District, Paso Robles Highlands District, San Juan Creek

 (1) San Miguel District: Try original Zinfandel, petit syrah

 (2) Paso Robles Estrella District: Try Syrah

 (3) Paso Robles Geneseo District: Good cab

 * Tasting: Robert Hall Cabernet Sauvignon 2023년 11월 수확한 와인이다 3.8의 산도를 보이고 있다. 그저 그랬다.

 (4) San Juan Creek : very hot

 (5) Creston District: Try red blend. Try cab

 (6) Paso Robles Highlands District: elevation shift가 크다. Rich tannin and acidity.
